About Us 

AECOVI-JEREZ, created in 1989, is made up of over 1,000 small-scale viticulturists, with 20% of the total surface area of vineyards in the Sherry Region (“Marco de Jerez”) in the province of Cádiz. In all of Europe, these vineyards are the furthest south and closet to the ocean.

AECOVI’s fine selection of wines and vinegars brings together small-scale wine growers’ craftsmanship and meticulous care, traditional ageing of the wines, and the AECOVI team’s solid oenology background.

We produce traditional Sherry wines and vinegars and innovative white and red wines from the Tierra de Cádiz (Cádiz region).

Our vineyards are treated with environmentally-friendly systems and our wines and vinegars are made with modern fermentation systems, aged using the traditional “criaderas y soleras” ageing system in oak vats.


Types of grapes and soil

White wine grape varieties: Palomino, which is specific to the area. Pedro Ximénez: we reintroduced this variety in the Sherry region (Marco de Jerez), through an R+D project, taking advantage of its sun and proximity to the ocean in the grape-drying process. Moscatel is our third white grape variety.
Red wine grape varieties: Tempranillo, Cabernet, Syrah, Merlot and Petit Verdot.

Our vineyards are located mainly on a unique type of soil called “Albariza”. It is white, chalky and calcareous, retaining water in the driest months while serving as a screen that reflects the sun’s rays. Its proximity to the Atlantic Ocean brings sea breezes to the vineyards, providing a balance to the high index of sunny days characteristic of the southernmost vineyards on the Iberian Peninsula.
