Quality and the Environment 
Our firm commitment to the environment and quality begin with our artisan vineyards and extend to the entire wine-making process. Our wines and vinegars are characterized by their proximity to the vineyard but are also the result of innovative modern oenology.  

The small-scale wine growers who make up AECOVI take scrupulous care of their vineyards, drawing on advisory services provided by the AECOVI technical team, composed of agronomists and oenologists, thus combining artisan techniques and a commitment to the environment and quality in their vineyards. 

The wine-making process adheres to strict quality control standards monitored by our technical team. We also have an agreement with the Junta de Andalucía’s Laboratorio Agroalimentario y Estación de Viticultura de Jerez (Food and Agriculture Laboratory and Viticulture Department in Jerez), which carries out quality analyses of our products. As a result, the quality of the AECOVI product selection is guaranteed: AECOVI-JEREZ and its four cooperative wineries are “ISO 9001 certified”.
- Our wines and vinegars belong to the following Denominaciones de Origen (Denominations of Origin): “Jerez-Xérés-Sherry”, “Manzanilla-Sanlúcar de Barrameda” and “Vinagre de Jerez” (Sherry vinegar); or to the quality mention “Vinos de la Tierra de Cádiz” (Wines from the Cadiz Region).  We have also recently added organic Vinagre de Jerez (Sherry vinegar) to our products.
- All our products are made from grapes with a “Producción Integrada” (Integrated Production) environmental commitment certification. Our wines and vinegars have the Junta de Andalucía’s “Calidad Certificada” (Certified Quality) distinction. Aecovi-Jerez is the official headquarters for Convivium Slow Food Jerez, which is currently in the process of being constituted, now that its Founding Act has been held.
